This is one of my current favorite meals. It tastes so good and is so nourishing.
I season boneless, skinless chicken thighs with garlic powder, paprika, oregano, salt, and pepper, then air-fry them. I’m loving the no-mess cleanup and the consistent results of cooking in the air fryer.
I put some jasmine rice on to cook, then make a simple salad dressing in a bowl by squeezing in ½ a lemon, adding the same amount of olive oil, a splash of apple cider vinegar, nutritional yeast, salt, pepper, and one grated clove of garlic. I whisk it all together, then add spinach, arugula, and radish sprouts, tossing the greens to coat them evenly in the dressing. Next, I add sliced cucumber and tomatoes.
To assemble, I add the salad to a bowl, then a scoop of rice, followed by a sliced chicken thigh with half an avocado on top. I finish it with dill, parsley and cilantro leaves and a sprinkle of Maldon sea salt. So freaking good!
I went for an after dinner walk and thought about the monks who are finishing their 2300 mile walk for peace. I’ve cried about them every single day since I heard about their journey. I didn’t even realize how desperate I was for their embodiment of peace—their willingness to walk, breathe, and live peace in a world that constantly argues it won’t work.
Their walk doesn’t demand certainty. It doesn’t guarantee outcomes. It simply asks for presence. That presence has moved so many people. Their prayer, surrender, kindness and compassion is so instructive and impactful.
What it’s awakened in me is reverence—toward myself and other’s, toward what’s in front of me, toward the small, ordinary acts that actually sustain my peace moment to moment. It’s reminded me to slow down, acknowledge my intentions, to treat myself with patience as I make the mistakes I make, to easily let joy and laughter arise, and to return again and again to the basics: breathing, walking, taking care. Deciding over and over to keep peace in my heart.
